This is a delicious treat that our oldest, Micaiah, helped me create.  It has a sneaky ingredient that’s good for your brain. Can you guess what it is?  Hint, hint: Pop-Eye the Sailor Man loves to eat it!

They are flour-less (a huge plus for those with gluten issues), have a healthy fat, and are packed with fiber and nutrients from the spinach and flax meal!

These brownies are flourless because we use protein instead (you can use chocolate or vanilla), which gives you 23 amino acids (the building block of protein) in every bite. I’m always looking for ways to sneak more protein into every dish…even dessert!

Micaiah’s Brainy Brownies

Ingredients:

  • 1/2 cup coconut oil, melted
  • 2/3 cup honey
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 cups fresh spinach
  • 2/3 cup cocoa powder
  • 1/3 cup flax meal
  • 1/3 cup doTERRA TrimShake Chocolate Protein
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup walnuts, chopped (optional)
  • 1/2 cup dark chocolate chips (optional, but oh, so yummy!)

Instructions:

  1. Melt coconut oil in glass dish in microwave
  2. Combine with agave, eggs, vanilla, and spinach in a high powered blender and blend until smooth.
  3. Add in dry ingredients and blend again until smooth.
  4. Add in chocolate chips and chopped walnuts and stir (don’t blend!) mixture together with a spatula.
  5. Pour batter into a lightly greased glass dish, scraping the sides of the blender – Use an 8 x8 if making a single batch and 9 x 13 if you choose to double the recipe – I almost always do.
  6. Bake @ 350 for 10 minutes. We like our brownies gooey, so cook them a bit longer if you prefer.  You know they are done if a toothpick inserted into the middle is clean (but we never like ours all the way clean! The gooey-er the better!).

Tip #1:

If you double this recipe, which we like to do, double all the wet ingredients and spinach, blend in a blender, then pour into a bowl and add dry ingredients, finishing with a hand mixer. Our container will not hold all the wet and dry ingredients when it’s doubled!  We’ve made a few messes trying!

Tip #2:

If the batter appears too thick, add a small amount of almond or coconut milk (or other milk) to the blender and pulse. You may need to stir it a bit to get the milk to the bottom of the mixture, then proceed with blending. (A little bit could be a couple tablespoons or 1/4 of a cup
