We love spaghetti squash at our house!! The kids don’t even miss regular pasta noodles because this dish is so tasty!  And we all find it fascinating that there is a “real” food that grows in nature that owns the trademark for spaghetti.  The Italian version is a  “knock off” of the real thing! 🙂

Spaghetti Squash with Turkey Meatballs

Ingredients

  • 1 spaghetti squash, halved lengthwise
  • coconut Oil (or EVOO)
  • salt & pepper
  • 1 onion, finley chopped
  • 4 garlic cloves
  • 2 tsp fresh oregano
  • 1/4 c. grated Parmesan cheese
  • 2 T oat bran or almond meal or breadcrumbs
  • 1 lb. ground turkey or grass fed beef
  • 4 cups chopped kale or spinach or other greens
  • 1 c. chicken stock

Preheat oven to 375. Season cut sides of squash with salt and pepper. Bake, cut sides down, on a baking sheet or in a glass dish with a little water in the bottom until tender, about 45 minutes. Another way I do this ti to steam my squash in a big steamer pot for about 20-25 minutes or until tender. This way is faster. Cool and scrape flesh into a bowl with fork to create strands of “spaghetti”. Drain before using.

Heat 1 tsp. coconut oil or other oil in medium skillet over medium. Cook onion and garlic, 1o minutes. Add oregano, cook 30 seconds. Divide between 2 bowls.

Stir 2 T cheese into one bowl of onion mixture. Mix in breadcrumbs, turkey (or beef), 1/2 tsp salt and 1/2 tsp pepper. Form into balls.

Heat 4 tsp oil in large skillet over medium. Brown meatballs on all sides, 6 minutes. Transfer to a plate and repeat as necessary. To pan, return remaining onion mixture, chicken stock, and meatballs. Gently simmer, slightly covered, until meatballs cooked through, 5 min. Add greens and cook until just wilted, 1 minute.

To serve, spoon spaghetti squash onto plates, then top with meatballs and spinach-sauce. Top with remaining Parmesan cheese.
